I feel sluggish in summer and I tend to cook really simple dishes, like this 15 minutes mushroom teriyaki, so I can be in and out from the kitchen as fast as possible. Although we are making a teriyaki dish, there is no need to buy a bottle of teriyaki sauce. As long as you have soy sauce, mirin, sake, and sugar, you can make your own teriyaki sauce at home.

I use super common white button mushroom to make this mushroom teriyaki dish since this is the most widely available mushroom. Of course you can use other varieties of mushroom too, such as king oyster, fresh shiitake, and fresh portobello. When you use king oyster or fresh portobello mushrooms, this can easily be made into a main dish.

I always stock fresh scallions in my refrigerator, so chopping some up to garnish this easy mushroom teriyaki dish is a no brainer. Another possible garnish is to use lemon zest, and even squeeze some of the fresh lemon juice to the finished dish to make an instant teriyaki ponzu mushroom dish!

There are recipes that are suited for people who have been cooking for years and years, and then there are recipes like this. I have been making this chicken and mushroom sauce since back in my college days, so I am quite certain even novice cooks can handle this. First, you fry the onion, garlic, mushroom, and chicken. Then, add soy sauce, kecap manis, ground pepper, and water. Once it boils, add hard boiled eggs (peeled!), and simmer away for 30 minutes. Easy!

Kroket Panggang Daging Jamur – Beef and Mushroom Baked Croquette Recipe

Components of a baked croquette: (1) Mashed potatoes ingredients: potatoes, egg yolk, butter, salt, pepper, and nutmeg. (2) Ground beef filling ingredients: ground beef, mushroom, onion, garlic, butter, parsley, salt, sugar, and pepper. (3) Mashed potatoes. (4) Ground beef filling.

Indonesian kroket (croquette) conjures an image of deep-fried cylindrical finger food with a savory meat filling wrapped in mashed potato, coated in egg and bread crumbs.

As much as I love the traditional version, I have to admit that it takes time and patience to shape individual croquette. Also, there are days that I simply don’t feel like deep frying. When such a day coincides with my craving for croquette, I turn on my oven and bake myself this kroket panggang (baked croquette).

Though you can definitely use my previous croquette recipe to make the baked version, today I am going to share another croquette recipe, kroket panggang daging jamur – beef and mushroom baked croquette.

Assemble the croquette: (1) Arrange meat filling in a cast-iron pan. (2) Cover the filling with an even layer of flavored mashed potatoes. (3) Brush the mashed potatoes with egg yolk. (4) Sprinkle with a panko breadcrumb and parmesan mixture.

What do you need to prepare Indonesian kroket panggang/baked croquette?

There are two components to a baked croquette, the mashed potatoes for the skin, and the meat filling.

For the mashed potatoes skin, you will need: potatoes (steamed/boiled until tender enough to be mashed), unsalted butter, salt, pepper, nutmeg, and egg yolk.

Simply combine mashed potatoes with unsalted butter, salt, pepper, nutmeg, and egg yolk. This is our croquette skin made from flavored mashed potatoes.

For the meat filling, you will need: unsalted butter, diced onion, minced garlic, ground beef, diced mushroom, salt, pepper, sugar, and chopped fresh parsley.

Heat butter in a frying pan over medium-high heat, then sauté onion and garlic until fragrant. Add ground beef and mushroom, stir until beef is no longer pink. Season with salt, pepper, and sugar. Lastly, add chopped fresh parsley and gently stir to mix.

How do you assemble kroket panggang/baked croquette?

Assembling kroket panggang is super easy. The very first thing you need to do is to choose the vessel you want to bake the croquette in. You can use an 8-inch or a 9-inch square baking dish, or a 12-inch cast-iron skillet like what I did.

Once that is decided, you simply need to do the following:

  1. Lightly grease the baking dish/cast-iron skillet.
  2. Arrange the meat filling in a baking dish/a cast-iron skillet.
  3. Cover the meat filling with the flavored mashed potatoes.
  4. Brush the mashed potatoes with an egg yolk.
  5. Sprinkle with a 2:1 mixture of panko breadcrumb and parmesan cheese.

The assembled croquette is now ready to be baked. Easy and super fuss-free compared to traditional kroket, right? 🙂

Here is what you need to do to bake the croquette.

  1. Preheat oven to 180 Celsius (350 Fahrenheit).
  2. Bake the croquette for 50 minutes.
  3. If the top is not golden brown yet, turn on the oven broiler to brown the top. It will be brown at no time at all, so be vigilant when you do this. I usually only need at most 3 minutes to get the desired golden brown color.

Once the croquette is baked, it will be super tempting to serve it immediately. I would advise letting the croquette rests for 15 minutes before slicing and serving. This way, the croquette will be able to hold its shape so much better.

Tips and tricks to prepare baked croquette

Make ahead

You can prepare and assemble the baked croquette ahead of time. Make it the night before or on the morning of, then store the assembled croquette covered in the fridge. Simply bake it right before you want to serve it.

Storage

Once baked, this dish can be stored in the fridge. I have previously stored the leftover for up to 5 days in a covered air-tight container.

Orak arik is a simple everyday dish consists mainly of scrambled eggs with vegetables, tofu, mushroom, and even meat if you so wish, though the most common ones are usually just vegetables.

Today I am sharing a recipe for orak arik tahu jamur, which is a version of this popular Indonesian household dish with mushrooms and fried tofu cubes.

If you want a quick dish to finish your carrot or odd stalk of celery, this is going to be the perfect dish to make as long as you have some eggs and vegetables to go along with it.

I also have another orak arik recipe using just eggs and vegetables for when you are running out of tofu and/or mushrooms. 🙂

For the egg scramble portion, we will need eggs, salt, and ground white pepper.

For the fried tofu cubes, we will need firm/extra-firm tofu, garlic, salt, and water.

TIPS: You can buy fried tofu cubes from Asian grocery so you can skip frying the tofu portion and finish preparing this dish even faster.

The remaining ingredients include shallot, onion, garlic, scallions, red chilies/red bell pepper, fresh mushroom, oyster sauce, kecap manis (Indonesian sweet soy sauce), fish sauce, and ground white pepper.

If you decide to fry your own tofu, start by cutting a block of firm/extra-firm tofu into 16 pieces.

Marinate tofu cubes with minced garlic, salt, and water for about 15 minutes.

Heat about two tablespoons of oil in a non-stick frying pan or a well-seasoned cast-iron skillet over medium heat.

Pat dry tofu cubes, then fry until all the tofu cubes are golden brown. Set aside.

Transfer the finished dish to a serving plater and garnish with scallions.

Cooking orak arik tahu jamur

1. Beat eggs

In a mixing bowl, lightly beat together eggs with salt and ground white pepper. Set aside.

2. Fry aromatics

Add 2 tablespoon oil to the frying pan. Stir fry shallot, onion, garlic, the white part of scallions, and Fresno chilies/bell pepper until fragrant, about 2 minutes.

3. Fry mushroom

Add mushroom, stir to mix, and cook until the mushroom wilt.

4. Make egg scramble

Push everything to one side of the pan. Pour beaten eggs to the clean side of the pan. When the eggs start to set, stir with a spatula to make scrambled eggs.

5. Add tofu and seasoning

Return fried tofu cubes to the pan. Season with oyster sauce, sweet soy sauce, fish sauce, and ground white pepper. Mix well. Adjust seasoning as needed.

6. Serve

Turn off heat. Transfer to a serving plate, and garnish with the green part of scallions.

Bakwan Jamur – Mushroom Fritters Recipe

Bakwan jamur – Indonesian mushroom fritters.

Bakwan (Indonesian fritters) is a popular snack and side dish consumed in Indonesia. The most basic one is made with a mixture of cabbage and carrot, though shrimp and corn are also popular choices.

This recipe for bakwan jamur is using white button mushrooms as the main ingredient. It is a very unusual choice, but I love the result. Mushroom is a very meaty vegetable, and this can serve as a main dish for vegetarians.

Another difference between this recipe and other typical bakwan recipes is that I choose pan frying instead of deep-frying. I think the pan-frying version tastes just as good, so this can be a great option when I don’t feel like deep-frying. If you want a more authentic and traditional approach, stick to deep frying, otherwise, feel free to pan fry 🙂

We will need button mushrooms, garlic, scallions, bell pepper (or red/green chilies), all-purpose flour, rice flour, eggs, coriander, salt, sugar, and white pepper.

You can use either white or brown button mushrooms. You can even use oyster mushroom if that’s what you have.

Bell pepper vs. chilies

If you are planning to serve these to people who can tolerate plenty of heat from chilies, feel free to use red/green chilies instead of bell pepper. I usually use Fresno or jalapeno since these are rather mild, and more people will be able to enjoy the fritters.

Rice flour is optional

Rice flour makes the fritters crispier. If you don’t have rice flour at home, you can replace it with the same amount of all-purpose flour.

If you prefer super crispy fritters, feel free to use a mix of 50% all-purpose flour and 50% rice flour.

How to cook bakwan jamur

1. Prepare the batter

In a mixing bowl, combine all-purpose flour, rice flour, eggs, coriander, salt, sugar, white pepper, and water into a thick paste.

Add thinly sliced mushrooms, minced garlic, thinly sliced scallions, and diced bell pepper to the batter. Stir with a spatula until well mixed.

2. Fry the fritters

Heat 3 tablespoon oil in a skillet/frying pan on medium heat. Drop ladleful of mushroom batter into the frying pan, cook until both sides are golden brown, about 2 to 3 minutes per side. Repeat until the batter is used up.

Serving, storing, and reheating

You can serve mushroom fritters as a snack, or as a side dish with steamed rice. Most street food sellers in Indonesia will serve their freshly fried fritters with a handful of raw bird-eye chilies. I usually eat these plain, though some people also love dipping them in chili sauce.

Store any leftovers in an airtight container for up to a week. It is best if you can reheat them either by lightly frying them in a frying pan or with an oven toaster for about 5 minutes. Please avoid reheating in a microwave since, or the fritters will lose their crispiness.

RESEP MUSHROOM OATS PORRIDGE
untuk 2 porsi

Bahan Oat Porridge :

Bahan Topping Mushroom:

  • 2 sdm olive oil

  • 3 siung bawang putih, cincang kasar

  • 200 gram jamur champignon (kancing)

  • 150 gram jamur shitake (jika memakai jamur kering rendam terlebih dahulu)

  • 1/4 sdt daun thyme kering

  • Garam, merica dan kaldu jamur secukupnya

Bahan Poach Egg:

  • Air untuk merebus

  • 2 sdm vinegar 

  • 2 butir telur

Pelengkap:

Cara Membuat Oats Porridge: 
1. Panaskan 1 sdm olive oil, tumis 1 sdt jahe parut, aduk hingga harum.

2. Masukkan 1 cup Captain Oats Quick Cook, aduk rata.

3. Tambahkan 2 cup air, aduk rata. Masak sampai mendidih dan menyerupai bubur. Tambahkan garam, merica dan kaldu jamur. 

4. Aduk rata kemudian tuang dalam mangkuk saji.


Cara Membuat Topping Mushroom:

1. Dalam wajan lain panaskan 2 sdm olive oil, tumis bawang putih hingga harum.

2. Masukkan jamur shitake yg sudah dibersihkan dan diiris.

3. Tambahkan irisan jamur champignon, masak sampai layu sambil diaduk.

4. Tambahkan daun thyme kering, garam, merica dan kaldu jamur. Aduk rata , lakukan tes rasa. Tuang
topping jamur di atas bubur yg sudah dibuat tadi.

Cara Membuat Poach Egg:

  1. Didihkan air kemudian kecilkan apinya.

  2. Masukkan 2 sdm vinegar, aduk-aduk sampai air membentuk pusaran.

  3. Tuang telur satu persatu, biarkan bagian putihnya menyelimuti kuning telur. Masak sebentar sampai setengah matang.

Cara Penyajian:

  1. Tuang kecap asin.

  2. Tabur daun bawang iris, serta poach egg sebagai pelengkap

  3. Sajikan selagi hangat.
