Steaming chicken or fish with a simple salted soy beans sauce (Indonesian: tauco) is a healthy way to prepare a quick dish for lunch or dinner. Salted soy beans can be found in many Asian grocery store. My favorite salted soy beans is the one from Yeos, a Malaysian brand, which happens to be very similar to the ones I grow up eating in Indonesia. There will be slight different in taste if you choose other brands of salted soy beans, feel free to experiment to find out which one you like best.

If you opt to use chicken meat, I suggest a mixture of skinless boneless breast and thigh, or 100% thigh meat if you don’t mind the slightly higher calories. A pure 100% breast meat is still good, just not as juicy. You can also use white fish fillet slices (again, make it bite sizes) such as tilapia, rock fish, or red snapper, but be sure to reduce steaming time to 5 minutes since fish cooks much faster than chicken.

Chinese New Year is fast approaching, and as usual, I am busy baking cookies and cakes to celebrate. Today, I have a very delicious Chinese New Year cookies recipe to share with you, salted egg yolks and curry leaves cookies.

These cookies are super easy to prepare, and yet, very delicious. If you plan on having plenty of guests coming for the Chinese New Year house visit (拜年), you will definitely want to bake a double batch, at the very least. These will be gone in a blink of an eye. 🙂

What do I need to prepare salted egg yolks and curry leaves cookies?

The ingredients for these cookies are quite unique, unlike your typical cookies. You will need:

  • salted egg yolks. These are from duck eggs and not chicken eggs. My neighborhood Chinese market sells vacuum-sealed packets of steamed salted egg yolks, so I can immediately use them as is. If your market is selling the raw eggs, you will need to crack the eggs, then steam the egg yolks for 10 minutes to cook them.
  • fresh curry leaves. My neighborhood Chinese market carries this in their fresh produce section along with other fresh herbs. You may also see these in an Indian or a Middle Eastern market.
  • milk powder. I use Nestle Nido dry milk powder since I find this to be the closest to the kind we get in Indonesia and most other Southeast Asian countries. You can use baker’s milk powder, or even malted milk powder too, if that’s what you have.

  • black sesame seeds, to garnish the cookies

  2. Sieve in all-purpose flour, milk powder, cornstarch, baking powder, and salt. Mix well with a spatula.

  4. Gather the crumbly mix to form a soft pliable dough. I usually just use my hand. Then wrap the dough with a saran wrap and rest in the fridge for at least 30 minutes.

How to shape and bake the cookies

To shape the cookies, please do the following:

  1. Preheat the oven to 180 Celsius (350 Fahrenheit) and line baking sheets with parchment papers.
  2. Roll the chilled dough on a well-floured work surface into a 3 mm (1/8″) thick. Then use a cookie cutter to shape the cookies.
  3. Arrange the cookies on the prepared baking sheets, making sure there is about 1″ of space around the cookies.
  4. Brush the top of the cookies with egg yolk and garnish with black sesame seeds.
  5. Bake the cookies until golden brown. This should take about 15 minutes.

What if I don’t have any cookie cutter?

In that case, the easiest is to first shape the entire batch of cookie dough into a log. Then wrap the log with a saran wrap and chill for at least 1 hour, preferably 2 hours. Just prior to baking, use a sharp knife to cut the cookie dough log into 3 mm (1/8″) thick slices and arrange on prepared baking sheets. Apply egg wash, garnish, and bake as per the recipe. 🙂

How long can I store the cookies?”

Before storing the cookies, make sure you cool them on a wire rack until completely cool. Then transfer the cookies to an air-tight container. The cookies should stay fresh at room temperature for up to 3 weeks.

Chinese steamed ground pork is probably the dish that makes me think of my Mom the most every time I am not feeling well. She will diligently make this dish and serve it with plain congee. It’s a dish that is guaranteed to make me feel instantly better and healthier. 🙂

For the plainest execution of the recipe, you can get away without any salted duck eggs and it will still be a delicious dish. But Mom’s version has these salted duck eggs, so I always make mine following her recipe.

In a typical Chinese/Asian market, you should be able to get raw duck eggs, raw salted duck eggs, and boiled salted duck eggs. Be sure to pick up boiled salted duck eggs for this recipe.

Light soy sauce

There are two varieties of Chinese soy sauce: light soy sauce and dark soy sauce. Every time you see a recipe for a Chinese dish that simply calls for soy sauce, it usually means light soy sauce.

My favorite brand for light soy sauce is Pearl River Bridge and Kimlan, but you can use Kikkoman soy sauce too.

Mix ground pork, light soy sauce, sesame oil, tapioca starch/cornstarch, ground white pepper, sugar, and water. Please stir until the ground pork mixture has absorbed all the water and there is no standing liquid.

Adapting the recipe to use raw salted duck eggs

Crack open salted duck eggs and separate the egg whites from the egg yolks. Gently pinch with your fingers to break the egg yolks into smaller pieces.

Mix ground pork, light soy sauce, sesame oil, tapioca starch/cornstarch, ground white pepper, sugar, and water. Stir until all the water is fully absorbed by the ground pork mixture and there is no standing liquid. Then transfer to a steam-proof bowl.

Pour the egg whites over the ground pork mixture. Scatter and press the egg yolk pieces into the ground pork mixture as evenly as possible.

Again, steam the ground pork for 30 minutes in a steamer.

Most people buy salted egg yolks to prepare Chinese mooncakes, but if you have extra salted egg yolks and wonder what you can do with them, then I have a lovely pound cake recipe to share with you today. 🙂

This recipe should be easier to perfect than most pound cake recipes since it doesn’t require the step to cream butter and sugar, which is where most people stumble and end up with a not so perfect pound cake.

Plus, the addition of salted egg yolks gives the pound cake the umami magic, turning this cake into a delectable one that you can and should serve for special occasions.

Where can I buy salted egg yolks?

Preheat oven to 165 Celsius (325 Fahrenheit). Brush a 10-inch bundt pan with butter and dust with sugar.

In a mixing bowl, beat together eggs and sugar with medium speed until pale yellow and glossy, about 3 minutes.

Reduce the mixer speed to low, stream in melted butter, then turn the mixer speed to medium-high and beat for 2 minutes, or until the butter is fully incorporated.

Remove the cake from the oven and cool it in the cake pan for 10 minutes. Gently remove the cake from the pan and cool completely on a wire rack. Cut into serving slices and serve.

FAQs

1. Can I replace salted egg yolks with other ingredient?

Yes, you can try using 1/4 cup of grated parmesan. I find that this is the best substitute though I highly recommend sticking to salted egg yolks. 😉

2. Which bundt pan are you using?

I use a 10-inch Calphalon non-stick bundt pan simply because I got it off very cheaply during a big sale for less than $10. It holds about 10 cups of batter. Feel free to use another bundt pan with a more pretty design as long as it can accommodate the same amount of cake batter.

Siapa yang tak suka dengan si manis yang satu ini, saus karamel dengan cita rasa dan aroma yang unik pas sebagai teman untuk melengkapi topping desserts, olesan roti maupun dipping aneka pastry seperti croffle yang sedang hits saat ini. Agar rasanya tak monoton hanya manis saja, tambahkan sedikit sentuhan rasa asin kedalamnya dengan menambahkan sea salt atau salted butter dan saus karamel mu akan jadi makin istimewa.

Bahan utama dari saus karamel sebenarnya hanya gula pasir yang dilelehkan, proses melelehkan gula ini menghasilkan perubahan warna, aroma serta rasa. Ada sensasi wangi seperti berasap atau smokey yang menjadikan karamel khas, apalagi warnanya coklat keemasan selalu menarik ketika disandingkan dengan desserts apapun terutama es krim.

Semakin banyak proses rafinasi gula pasir yang dipakai, warna karamel biasanya semakin cerah kecuali terjadi kesalahan saat proses melelehkan atau singkatnya gosong. Proses rafinasi ini akan menghasilkan gula yang lebih putih bersih dengan butiran lebih halus yang sering kita kenal dengan nama refined sugar atau gula putih. Nah karena belakangan ini saya sedang suka memakai raw sugar, maka untuk resep saus karamel ini saya menggunakan raw vanilla sugar dari La Dame in Vanilla.

Nah keistimewaan dari produk gula La Dame in Vanilla ini adalah raw sugar dicampur dengan vanilla seeds atau biji vanilla yang merupakan isi bagian dalam dari vanilla pod (buah vanili). Bahan-bahan:

  • 450 gram dark chocolate / semi sweet chocolate (60%)
  • 145 gram mix nut (saya  pakai almond & walnut, panggang dan cincang)
  • 145 gram mix dried fruit (saya pakai raisin, dried cranberry & orange peel)
  • 6 gram  sea salt

Cara Membuat:

  1. Lelehkan dark chocolate dengan cara double tim atau menggunakan microwave. Sampai coklat meleleh, aduk untuk memastikan semua coklat sudah meleleh sempurna.
  2. Cincang kacang panggang dan buah kering, campurkan ke dalam lelehan coklat. Aduk, hingga semua berselimut coklat.
  3.  Siapkan loyang dengan alas kertas roti. Tuang campuran coklat di atasnya kemudian ratakan.
  4. Taburi dengan sea salt dan simpan dalam kulkas minimal 4 jam atau semalam agar coklat mengeras kembali.
  5. Potong-potong chocolate bark sesuai selera, simpan dalam wadah kedap udara.
